For many, the process of cooking or baking is not just to put supper on the table, but it is a religious experience. You wake up on a leisurely Sunday morning intent on making your secret family rtisan bread recipe. You dust flour on the cutting board with and methodically begin to kneed the dough. You lovingly move your hands, with pushing and pulling motions over and over again - knowing that each turn yields a divine texture. You prepare it for the oven and anxiously await how it comes out. You open the oven door anticipating a buttered crust that cracks slightly with a twist and a pillowy texture that has a nice chew. Instead, you instinctively feel that it did not turn out the way it was supposed to. Too much moisture escaped during the baking process.

You sleepwalk through your mundane daily routine, all the while anticipating what to throw together for supper. You make a mental checklist of your trip to the Sunday local market where you scored some sun-warmed, fragrant strawberries. You stuck them in the back of the fridge as an after-thought. Suddenly you are inspired by dinner al fresco featuring a strawberry spinach salad with a balsamic drizzle paired with a warm, oven baked baguette with a pat of Irish butter. Casual elegance at its best.

You've been there - at one of those dinner parties where the home chef has taken the time and effort to serve up some of the best food that you have ever tasted. The meat - cooked to perfection, carmelized, and a melt in your mouth texture that is simply divine. Or, that lemon and herb chicken that is so vibrant that your palette still occasionally recalls the subtle mix of acid and spice. You ask the hostess how she was able to pull off these meals that easily could be served in any 3 star restaurant. She gestures over to their new Signature Suite range that they just purchased from Appliance Canada with an integrated capacity for sous vide cooking.
